Unlike single-strength Blueberry purée, which retains more of the fruit’s natural water and maintains a Brix closer to its natural range, blueberry purée concentrate is produced by removing a controlled portion of that water. The result is a more concentrated ingredient that delivers greater blueberry flavor and fruit solids per pound while retaining the fruit’s characteristic pulp, body, color, aroma, and texture.
